Over summer vacacation, I mean for dinner I had a delightful green salad with crisp cucumbers, vine ripened plum tomatos, plump mushrooms, and sharp cheddar cheese drizzled with a light raspberry vinaigarette. For the main course, I had a classic american sloppy joe sandwich made with premium soy crumbles and seasoning, served on freshly baked bread.
My husband plays basketball on Tuesdays, so I had to throw together a meal with chicken sausage, diced tomatoes,garlic, onions, pasta, cottage cheese, parmensan,roasted red peppers and some cheddar cheese sprinkled on top. Then I baked it under the broiler for 5 minutes. Not bad for something I made up. Hubby had two helpings!!!.
I had a very nutritious dinner last night. I started things off with a bowl of Edy's Drumstick Ice Cream. I had some pretzel sticks and a handful of Swedish Fish. Oh, and some Crystal Light Lemonade.
Although, TWO DAYS AGO i made myself a grilled cheeze, and the image of Our Lady Of Guadalupe suddenly appeared on it. It was a miracle, really. The whole room filled up with this intense white light, and I heard angels singing. I would have taken a picture of the sandwich, but I ate it. I was hungrier than I thought... I'd give anything to do it all over..
hello! we are in a little blog battle right now. Your blog looks mighty tasty! I made speghetti for my children and me. Then I made breakfast for my sweet hubby who hates sketti. Tonight...chicken and dumplings for all!
I WOULD read that book "No one cares what you had for lunch" but right now I'm trying to finish "Dan Nowak is the Stupidest Name I Ever Heard". I'll let you know when I'm finished with it so you can borrow it.
